This Southwest Shrimp Quinoa Salad is absolutely delicious and filling. It's healthy and can be made with Chicken, or prepped as a vegetarian dish.

Ingredients

SHRIMP:
▢ 1 lb. baby shrimp raw
▢ 1 tbsp. olive oil
▢ 1 tsp. taco seasoning
▢ 1 tbsps. lemon juice

SALAD INGREDIENTS:
▢ 1 cup quinoa cooked
▢ 3/4 cup corn
▢ 3/4 cup black beans
▢ 1 cup cherry tomatoes halved
▢ 1/4 cup purple onion finely diced
▢ 1/2 cup green onion chopped

SALAD DRESSING:
▢ 2 tbsps. lemon juice
▢ 2 tbsps. olive oil
▢ 3/4 tsp. salt
▢ 1/2 tsp. garlic minced

Instructions
Cooked quinoa according to package directions.
Marinate the shrimp. Prepare the shrimp in a skillet until fully cooked.
Prepare all the salad ingredients. Place everything in a bowl and toss in with the dressing.
Serve and enjoy.
