I was on the pastry shift today and I was quietly doing my work. Suddenly, while making blue cheese danishes I placed two pieces of pears in a way that was just perfect for this bite. Symetrical, functional, and I said inside: wow, this is it, there is a flow. That little thing made the rest of my Day.

I know it might sound a little bit weird, completely unimportant but I also know there is a bunch of you who will totally catch my drift.

Aren't we all, bakers, get those little moments of satisfaction from finding an order in chaos and doing our work with grace, flow and style?
