Plantain quinoa skillet cakes Gluten free , dairy free , sugar free
2 plantains raw mashed
1 cup almond flour
3Tbl cooked quinoa
1 cup rice flour
1/2 cup monk fruit
2 farm eggs
2 Tbl sp coconut oil
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla
1 cup coconut milk
Bake at 350 for 20 min
Quick tip , tent it with a little aluminum foil .
Serve with yogurt and coquito !
