It’s that time of year when we get ready for our Galette des Rois (or King’s Cake). 👑 And that means hand-scoring hundreds and hundreds of these classic French cakes, each made with a reverse puff pastry crust - where the butter is on the outside of the dough during the lamination process (instead of inside, like a traditional puff pastry), resulting in a flakier caramelized texture. They’re filled with almond frangipane and baked until perfectly golden, and come with a golden paper crown and little fève to hide inside, so whoever finds it is deemed king or queen for the day.
