and it was so exciting to learn the vegan al pastor taco recipe from their chef @stevenlondono_. Apologies for the blurriness but these tacos were too good not to share with you all! #tacotuesday

Pastor Marinade:
5 guajillo chiles
2 morita chile
1 arbol chile
3 tablespoon oregano
2 tablespoon salt
4 pieces of garlic clove
4oz distilled vinegar
1 cup boiling water
1 cup pineapple juice

Marinade Directions:
1. Remove seeds and tail pieces from all the chiles. Add the chiles , oregano , salt and garlic cloves in a bowl.
2. Boil one cup of water and add it to the bowl. Add Vinegar and pineapple juice.
3. Let it steep for 20mins.
4. Blend everything in the bowl till a smooth paste. Cool down and refrigerate.

Salsa Verde:
1 avocado
4 small tomatillos peeled and cleaned
OR 2 large tomatillos peeled sand cleaned
3 pieces garlic
1 piece serrano ( optional )
3 tablespoon salt
1 bunch cilantro
2 oz distilled vinegar

Salsa Verde Directions:
1. Place all ingredients in a food processor.
2. Blend till smooth.
3. Check for salt at your liking.

Mushrooms:
Portobellos, buttons or whatever you have available.

Mushroom Directions
1. Slice into 1/4 inch pieces.
2. 2 portobellos plus 4 button mushrooms is more than enough.
3. Slice into 1/4 inch pieces.
4. Add 1 tablespoon of salt and 1 spring of thyme.
5. Steep the mushrooms in the marinade and sauté until crispy on a hot skillet.

Add the sautéed mushrooms to a corn tortilla, drizzle on salsa verde, and pineapple and/or cilantro to your liking!
