Ingredients:
Base
- 200g chicken breast
- 1/2 a mango
- Handful of coriander
- 1/2 avocado
- 1 medium cucumber or 4 mini cucumbers
- A hand full of cherry tomatoes
- 1/2 bunch of lettuce
- 2 cups brown rice

Marinade
- 1/4 cup soy sauce
- 1 tbsp sesame oil
- A drizzle of raw honey
- 1 tsp fish oil/sauce
- A drizzle of olive oil
- A sprinkle of salt, pepper, sesame seeds, chill seeds

Method
1. Combine all marinade ingredients together and coat the chicken and sit in the fridge for 1-hour minimum
2. Prepare your salsa by chopping your cucumber, tomato, and mango
3. Chop your lettuce as desired
4. Cook rice per packet instructions
5. Finely chop the coriander
6. Assemble the base of your bowl with rice, salsa, and lettuce
7. Cook chicken on medium heat for 5-6 minutes until golden in colour. Make sure the pan is nice and hot when putting the chicken in to seal it.
8. Add chicken to your bowl and sprinkle on the coriander
9. Add avocado to your bowl with a squeeze of fresh lime with more salt, pepper, chili, and sesame seeds if you wish
