85-year-old Nonna Nerina, and her granddaughter, Chiara, share their Thanksgiving pasta go-to recipe, "Fettuccine Paglia e Fieno." @pastawithgrandma

INGREDIENTS:
2 cups of flour
3 eggs
1 big handful of fresh spinach
1 tbsp salt

INSTRUCTIONS:
1) Pour 1 cup flour onto a wooden surface and create a well in the middle with you hand
2) Crack two eggs inside of the hole you made
3) Use a fork to open the yoke and vigorously stir from the center to combine
4) Slowly incorporate the rest of the flour into the egg mixture with the fork
5) Knead the dough by hand until it is smooth and elastic
6) Loosely wrap the dough to let it rest
7) To make the spinach pasta, first heat raw spinach in a pot over medium heat
8) Once the spinach has wilted, squeeze all the water out
9) Add the spinach to a food processor with one egg and pulse
10) Repeat the same process as before to incorporate the spinach mixture into the flour
11) Gently roll out the past dough with a large rolling pin
12) Gently roll the past to the halfway point, then repeat on the other half
13) Slice in thin strips across the folded pasta
14) Salt a large pot of boiling water and then gently add the pasta
15) Add your favorite toppings, and serve!
