"Holy cannoli! I made a keto cannoli cheesecake! This was so delicious and easily one of my new favorites! Hard to believe this one was sugar free and was actually better tasting than a traditional cannoli! The key component in making this was using @cutdacarb flatbread for the crust & @Flavorgod Seasonings seasoning, it gives it that cannoli crunch & flavor!"
Cheesecake filling:
-8oz room temp cream cheese
-8oz ricotta cheese
-2 eggs
-1/4 cup sweetener of choice
-2 tsp vanilla extract
-1 tsp cinnamon
-1 cup sugar free chocolate chips. I used Hershey’s brand sugar free milk chocolate chips
•Using a hand mixer whip cream cheese and ricotta cheese together, then add sweetener, add one egg at a time, & add vanilla extract & cinnamon. Hand mix in chocolate chips
@cutdacarb cannoli crust:
-7 flatbread sheets
-1/2 stick butter; melted
-2 TBS @Flavorgod Seasonings chocolate donut flavoring
-1 tsp vanilla extract
-1 TBS sweetener of choice
•Bake flatbreads at 200 degrees for 20 minutes. You basically want to dry them out without browning them. Gently break them apart once they are cooled, & pulverize in a blender.
In a bowl add your melted butter, vanilla extract, @cutdacarb bread crumbs, sweetener, & @Flavorgod Seasonings chocolate donut seasoning, mix well (set aside a few TBS of crumb mixture for garnishment if desired) firmly pack into baking pan of choice, bake 10 min at 350 degrees. Let cool completely
-add cheesecake mixture to top of cooled crust. Bake in a water bath at 350 degrees for 30-40 minutes depending on your oven. When toothpick comes out clean from the center it’s done.
Cool to room temperature, put in fridge for atleast 2 hours to completely cool. Top with melted chocolate chips drizzle, & more chocolate chips if desired, & homemade whip cream. Going homemade on the whip cream will make this a home run! I just whipped together some heavy cream, sweetener, & vanilla extract with a hand mixer until I hit my desired texture!
