“When I think about coffees from Santa Bárbara Mountain in Honduras, I think of coffees with flavors that pop,” says Kyle Evans, a member of Blue Bottle Coffee’s green coffee team. Earlier this year, he visited some of the growers we work with on this staggering mountain, including Jobneel Caceres (LEFT, shown here with grower and specialty coffee leader @benjaminpaz, RIGHT).
The adverse conditions on the mountain—chilly temperatures and frequent precipitation—stress coffee cherry in such a way that creates complex coffees that are like no other in Honduras. The lot we have from Jobneel right now is exclusively Catimor, producing a coffee that reveals a kaleidoscope of flavors of brown sugar, yuzu, and dried strawberry.
