“When I think about coffees from Santa Bárbara Mountain in Honduras, I think of coffees with flavors that pop,” says Kyle Evans, a member of Blue Bottle Coffee’s green coffee team. The adverse conditions on the mountain—chilly temperatures and frequent precipitation—stress coffee cherry in such a way that creates complex coffees that are like no other in Honduras. The lot we have from Jobneel right now is exclusively Catimor, producing a coffee that reveals a kaleidoscope of flavors of brown sugar, yuzu, and dried strawberry.
