 * Slice the peeled carrots, jalapenos and onion. Set aside
 * Trim excess fat from the chicken thighs and apply the marinade ingredients.  Optional: marinate for 30 minutes to an hour
 * Heat an oven-safe skillet and add 1 tbsp. of olive oil. Pan sear the chicken thighs until golden brown on each side, about 5 minutes on each side. Set aside in the bowl where you marinated them or in a new bowl.
 * In the same skillet, add sliced onions to the bottom followed with the chicken thighs . * Add the peppers, jalapenos, carrots, Creamer potatoes, chicken broth and remainder of the extra marinade from the bowl.
 * Spray the top of the dish with olive oil and bake in the pre-heated oven for 45 minutes or until the chicken reaches an internal temperature of 165 degrees.

Ingredients
