Light bulb Breezey moment!! #SummerFit + fav @almondbreezeaus in the lucky dip food machine= pumpkin and cranberry loaf woohoo🎉

Recipe: pg138 in #SummerFitRecipes
- 1/2 butternut Pumpkin (280g ish) steamed and whizzed up in processor with 3 Tbs of fresh OJ, allow to cool for 5mins
- Combine all dry ingredients 1 C Almond meal, 1 C rolled oats, 1/2 C buckwheat flour, 1 Tbs psyllium husk, 1/4 tsp salt, 1 tsp baking powder, 1/4 tsp bicarb Sosa, 1 tsp cinnamon, 1/4 tsp nutmeg.
- whisk 2 eggs for high tide amount of time, add 3 Tbs of melted coconut oil, 3Tbs of unsweetened @almondbreezeaus milk, 3 Tbs maple syrup, 1 tsp of vanilla extract and fold into dry ingredients, add the pumpkin/OJ combo and mix until just combined. Last fold through 3 Tbs of chopped walnuts and 1/2 cup of dried cranberries ( can also sub in sultanas or dates if low tide Cranberry sitch)

- sprinkle top with 3Tbs of pumpkin seeds and 2 Tbs of chia seeds... Bake for 35-40mins on 180 C or in my new food invention machine will take less than a sec 😆
