But, then I realized the ones you buy in store have bunch of sugar, preservatives, etc.. so i just created my own delicious lemon ice cream cake 😋 It’s so easy to make. Here is the recipe:   Lemon vegan cheesecake   Take 8 inch non stick springform cake pan (that you can open on the side)   •Base  1 cup of oat flour (blend 1 cup of oats)  1/3 cup peanut butter  2 tbsp maple syrup   Mix all together with your hands and spread around the cake pan, press it down so it spreads equally thru out the pan. Put it in the freezer while making cream filling.  •Cream filling  200grams or 1,5 cups of soaked cashews ( soak them in the water the night before or put them in boiling hot water for about 1hr or more)  1 tsp vanilla extract  2 squeezed lemon juice ( I like mine more sour so I do 2,5 lemons, but it’s totally up to you )  2 tbs lemon zest ( that’s about how much you get from grating one lemon )  Half a jar full fat coconut milk (canned)  2 tbs melted coconut oil 4 tbs maple syrup  Blend it all together, taste it and if it’s too sour for you add more maple syrup. Then pour it on top of the base layer and put it in the freezer for 4hrs or over night. Then you move it to the fridge and let it defrost and eat any time. When not eating put it back in fridge.
