Dry out salmon for 15 min. Heat up Cast Iron or pan of your choice on medium heat. Cook salmon til golden brown, around 7-8 minutes. My filets were a little thicker. While salmon is cooking cut up the mini tomatoes and prepare spinach. Once salmon is done cooking remove from pan and place on plate.. add more butter, add tomatoes and spinach. Turn down head and add heavy cream and Parmesan cheese. Let simmer for 3 minutes.
