When it comes to champagne and food pairing, think that less is more; one perfectly chosen ingredient is enough to enhance tasting sensations. Pair a glass of Ice Impérial with a granny smith tartare, lifted with some cilantro for a juicy and contrasting combo.

You will need: 1 granny smith apple, 1 lime, 2 cilantro sprigs, Maldon salt.

1/ Clean the apple, cut it in 4 equal parts & remove the center with the seeds.
2/ Peel 2 quarters then cut the 4 quarters in very small dice.
3/ In a bowl, mix your apple dice with the juice of half a lime.
4/Clean & chisel the cilantro leaves, and add them to your diced apple.
5/ Serve fresh in a spoon or a shot glass, with a pinch of Malden salt.
