That's the case with his newest recipe, a Sourdough Schiacciata that's similar to focaccia, but a little thinner, crunchier, and maybe, in his opinion, even better for summer sandwiches! The dough is at lower hydration than focaccia as well, which makes it easier to handle and further amplifies the crispy result.
