The single most genius thing you can do to a tomato, also just might be the simplest. The low and slow roasting (200 degrees for 4-6 hours) will leave behind baby-soft curls of tomato skin, cradling a condensed, jammy, electric-tomato core. TIP: you're going to want to make A LOT of these, but good news is they keep for a week in the fridge, and are just fine in the freezer.
