Happy Friday! I Hope you're staying healthy and safe! Today I am showing you guys a new recipe, it is Spaghetti Squash Carbonara. Although I am a sucker for normal spaghetti carbonara, I have been trying to choose healthier options when I can. So this dish is a nice balance between indulging and being healthy! I doubled the recipe as I was cooking for three people and served it with a side of sweet potatoes. Hope you enjoy!

Spaghetti Squash Carbonara Ingredients

- 1 large spaghetti squash (about 2 pounds)
- 4 slices bacon, cut into small pieces
- 2 teaspoons minced garlic
- ¼ cup chicken broth
- 2 egg yolks plus 1 whole egg
- 1/3 cup heavy cream
- 1 cup freshly grated Parmesan cheese (or Pecorino Romano)
- 2 teaspoons salt, divided
- 1¼ teaspoons fresh cracked black pepper
