Nothing says summer like potato salad. This vegan version from @thefullhelping uses a mayonnaise with an aquafaba base, and is rich without feeling too heavy, and pleasantly tangy as-is—no sour cream required. Feel free to experiment, too, adding in leftover chickpeas, chopped broccoli florets, green beans, tomatoes, whatever needs using. Recipe at the link in bio.
