Today’s lunch chopped salad was a classic Cobb. These are so easy to do with whatever you have in the fridge, really. I grilled chicken breast, pan fried bacon and hard boiled eggs while I washed and chopped the rest. Avocado, blue cheese and scallions. Served with my standby vinaigrette.
2 teaspoons Dijon mustard
2 teaspoons real maple syrup
1/4 red wine vinegar
2 tablespoons vegetable oil
1/2 cup extra virgin olive oil
Coarse salt
Pepper
Whisk together mustard, maple syrup and vinegar. Slowly whisk in oils, and season to taste with salt and pepper
