Inspired by the comforting ochazuke—rice served in green tea, water, or broth—Culinary Director at Large @justinchapple had at @29bteahouse, and his resolution to drink more tea this year, this salmon ochazuke is the epitome of simplicity. The soothing, toasty flavor of genmaicha tea provides the perfect broth-like base for leftover rice, smoked salmon, scallion, roasted nori, pickled ginger, and furikake seasoning.
