Since Hanukkah is only a day away, I thought I’d share a surprisingly easy and simple vegan latke recipe. All you need is: canola oil, salt, and potatoes. (I picked up russet potatoes, purple potatoes, and sweet potatoes for variety). Full recipe below:

Ingredients:
1. 3 potatoes (the traditional recipe usually calls for russet potatoes, but purple potatoes also work well)
2. Canola oil
3. Salt

Directions:
1. Peel and shred the potatoes on a box grater
2. Place in bowls and use a paper towel to suck out any excess moisture
3. Coat the pan in canola oil
4. Season shredded potatoes with salt
5. Place handfuls of the potato mixture in the pan (ensure there is enough oil) and fry until golden brown on both sides
6. Serve with homemade apple sauce; (to make apple sauce, cut 3 apples into cubes and boil with one cup of water and 3 tbsp of brown sugar, 1 tsp of cinnamon; taste for desired sweetness and texture)
