ナイジェラ・ローソンさんのインスタグラム写真 - (ナイジェラ・ローソンInstagram)「When I was in Mumbai nearly two years ago, I was taken to @noormohammadihotelmumbai - a very basic room, with cooking of exquisite complexity - by @nfpexplore, and I have to say I’ve been thinking of the Chicken Hakimi ever since. So, having a couple of hours off during this visit to Mumbai, I just had to grab the opportunity to eat it again. Think tandoori chicken, with rich, deep spices, and more butter than you could imagine possible; naan at the ready for dunking. Other highlights include (pic 2) the Chicken Shami Kebabs with raw onions, fresh mint, and coriander chilli chutney. Pic 3 is of the crisp, almost laminated butter naan. Then, final pic, the Nalli Nahari, day-long slow-cooked buffalo with bone marrow; daal ghee; aloo fry, potatoes in more golden ghee. The White Chicken Biryani is also wonderful. I haven’t got a photograph, and it’s true it’s nothing to look at, but the chicken is delicate and unbelievably tender, and the rice so delicately spiced.
