How do you like your eggs? For me, it’s always soft scrambled - the trick is to sauté shallots in butter first, then cooking the eggs slowly over a low flame. Fold in a scoop of crème fraîche at the end, top with fresh chives, and serve with toasted sourdough. That’s how we do eggs at @189bydominiqueansel for our Weekend Table brunch. 😊🍳🥚

This would make me sick. I can really only eat them rarely hard boiled or sometimes soft. This mush would have me in the bathroom all night
