Refrigerate until ready to use.⁠ 🔹Egg roll instructions⁠ Lay 1 egg roll wrapper so it's shaped like a diamond. Just below the center of the wrapper and leaving some space from the edges, add 1/2 of the avocado, 1-2 pieces crumbled bacon, 1 1/2 tsp red onion, and a splash of lemon/lime juice (if using). Sprinkle 1/2 tsp bacon lovers on top. Bring the bottom corner up and over the filling. Hold it down to create a case around the filling then roll the wrap-encased filling upwards just once. Fold the sides of the wrapper in. Continue rolling the filling part upwards. Wet the inside of the top corner with water and it will stick to the rest of the wrap, sealing it. Repeat to make other egg roll. Heat ghee in a nonstick pan over medium-high heat. Once melted, add egg and pan-fry each side until golden.
