Serves 2

Ingredients:

200g soba noodles

100g green beans

100g broccoli spears

bunch of coriander

1 spring onion, thinly sliced

2 tbsp toasted sesame seeds/black if you have them

Sea salt and black pepper

For the peanut sauce:

3 tbsp crunchy peanut butter

1/2 tsp mashed garlic

Zest of 2 limes and the juice of 3

2 1/2 tbsp chopped/grated ginger

3 tbsp Chinese rice vinegar

3 tbsp soya sauce

Set a two large saucepans to boil and salt one of them. Add the greens to the salted pan and cook for 3-4 minutes before draining and running over cold water. In the second pan add the soba noodles and cook according to the packet’s instructions. Drain and rinse in cold water to stop the noodles from sticking. Put to one side.
In a small bowl add all the ingredients together for the sauce and whisk together. Taste to check the seasoning is to your taste. Add cold water to loosen the sauce if desired. Toss together with the noodles, beans, and top with the coriander leaves, spring onion and sesame seeds.
