1 package (pack of 2) refrigerated pie crust
2 eggs
2/3 c milk
1/4 c frozen chopped spinach, thawed and drained of water
1/4 c shredded cheddar jack cheese
1/4 c finely grated parmesan cheese
1/2 c finely chopped cooked bacon, low sodium
1/2 tsp FlavorGod Garlic Lovers
Pinch of FlavorGod S+P (omit if you can't find low sodium bacon)

Spray a 24 well mini cupcake tin with cooking spray and set aside.
Preheat oven to 425°F.
In a mixing bowl, combine the eggs, milk, cheeses, spinach, bacon & seasonings.
Set aside.
Unroll one pie crust and using a 3" round cutter, cut circles from pie crust.
Save the scraps.
Repeat with other crust.
With the remaining scraps, gather it up into a ball and roll out with a rolling pin at the same thickness of the rounds.
Cut more circles to equal 24 rounds.
Place a round over a cupcake well and press down the bottoms and sides.
Repeat with the rest.
Spoon about a tablespoon of the egg mixture into each pie crust.
Bake for 12 to 14 minutes or until filling is cooked all the way through and pastry is golden.
Rotate halfway through baking.
Let them cool slightly inside the cupcake pan and then transfer to a cooling rack.
Enjoy them warm!
