Ingredients: * 2 medium Italian eggplant, sliced thinly (less than 1/4") lengthwise * 1 bunch of spinach, washed and drained * 1-1.5 lb ground beef * 1/2 cup minced onion * 3-4 garlic cloves, minced * 1.5 tbsp FlavorGod Italian Zest * 1 tsp FlavorGod Garlic Lovers + additional 1 tsp * 1/2 tsp FlavorGod Pink Salt and Peppercorn + more to taste * 1 tsp dried basil * 1 tsp dried parsley * pinch of dried chili flakes (optional) * 1 bay leaf * 2 cups pasta sauce (storebought or homemade) + extra for assembly * 6 oz whole milk ricotta cheese * 6-8 oz fresh mozzarella cheese  Preparation: 1. Preheat oven to 400F. Line a single layer of eggplant on a silicone lined baking sheet. Drizzle with olive oil and season with FlavorGod Pink Salt and black pepper. Roast the eggplant for 8-10 minutes. Remove from oven and let cool until ready to assemble. 2. In a large skillet/pan, heat 1 tbsp oil over medium high heat. Add the spinach and cook down with 1 tsp FlavorGod Garlic until spinach has wilted.  3. In the same large skillet/pan, heat 2 tbsp oil over medium high heat. Saute the onions for 3-4 minutes until onions are soft and fragrant. Add the garlic and cook for an additional 2 minutes. Add the 3 FlavorGod seasonings, dried basil and parsley and dried chili flakes, if using. Cook for another 2 minutes.  4. Add the ground beef. Break up the chunks and brown the meat. Once most of the meat has browned, add the pasta sauce. Stir and add the bay leaf. Turn the heat down to medium and simmer for 10-15 minutes, covered.  5. Remove cover and stir. Turn heat off and get ready to assemble.  6. Grease a deep baking dish. Add a few tbsp of pasta sauce on the bottom of the dish. Layer the bottom with one layer of eggplant "noodles". Top with meat sauce, then spinach, then cheese. Alternate layers, with the eggplant noodles last, on top. Top with additional cheese and a heavy pinch of FlavorGod Italian Zest.  7.
