SPICY SAUSAGE & SWEET POTATO MINI-SKILLET 🥘🥘🥘

Here's a fun breakfast idea that finishes in the oven using cast-iron
mini-skillets. We used FLAVOR GOD CAJUN LOVERS Seasoning for a little
extra kick with ours. However, feel free to substitute with any other
FLAVOR GOD seasoning you'd prefer.

INGREDIENTS
4 single-serve cast-iron skillets
2 pre-cooked sausages, sliced (we used Andouille)
1 sweet potato, peeled and diced small
1 zucchini, quartered and chopped
4 eggs
2 Tbsp olive oil
FLAVOR GOD CAJUN LOVERS Seasoning, to taste

INSTRUCTIONS
Preheat oven to 375ºF.

Start using a regular-sized stovetop skillet and sauté the diced sweet
potato in about 2 tablespoons of olive oil over medium heat. Season
while cooking as desired with FLAVOR GOD CAJUN LOVERS Seasoning, plus a
little salt and pepper. Cook potato until tender, about 10-12 minutes.
Next add the chopped zucchini and sausage to the same skillet, stir and
cook everything for another 2 minutes.

Divide into equal portions and transfer everything from the
regular-sized skillet into the four mini-skillets. Next crack an egg
directly over the contents of each mini-skillet. Place the mini-skillets
in your 375ºF oven and cook just until egg sets – around 9-12 minutes.

Carefully remove mini-skillets with oven mitt or towel, and enjoy!
