2 weeks ago when we got home from Sun Valley there was LITERALLY no food in the fridge! None. Just the stuff in the side door and a random bunch of kale from the week before. I was HANGRY. Things were bleak! Not having time to run to the store, I whipped up what I thought would be a half ass pasta that we’d just quickly eat before we went to bed. Turns out, this Sun Dried Tomato and Kale Pasta with a quick White Wine sauce ended up being so freaking magical that I’ve made it 4 times in the last 2 weeks and I’m OBSESSED. I had the same experience one day when I was 15. I diced up some carrots, potatoes and some fresh tomatoes. Sauted it in evoo and viola.. tastes amazing. I haven't made the same after that, but it was one if the best pasta dishes I have ever made in my life. That, or I was just HANGRY
