Ingredients... . 2 handfuls of green beans Sea salt and freshly ground black pepper 2 lemons 2 x 7-ounce chunky salmon fillets, skin on, scaled and bones removed 2 heaped table spoons green pesto Olive oil . . To prepare your salmon... . 1) Preheat oven to 400 Degrees Fahrenheit 2) Trim your beans by cutting off the stalk ends, but leave the whispy tips on 3) Put the beans into a pot of boiling water, with a pinch of salt and cook for 3 to 4 minutes 4) Halve one of the lemons 5) Get yourself about a yard of aluminium kitchen foil and fold it in half to give yourself two layers 6) Put a handful of green beans in the middle of the aluminium foil 7) Lay a salmon fillet, skin side down, across the green beans and spoon over a good table spoon of green pesto 8) Drizzle with olive oil, squeeze over the juice of one half lemon, and season with salt and pepper 9) Pull the aluminium foil edges together and scrunch them up to seal the parcel 10) Repeat these steps to make your second salmon fillet parcel and place both on a baking sheet . . To cook and serve your salmon... . 1) Put the sheet pan into your hot oven and cook for 15 to 20 minutes 2) Remove the pan from the oven and let it stand for a minute before carefully unwrapping and checking that the salmon si cooked through 3) Either serve the parcels on plates, or as they are 4) Cut the remaining lemon in half and serve on the side for squeezing over 5) Nice served with potatoes
