Was requested on Twitter so sharing it here too. Ok this is our simple Guiness-Whiskey Stew Recipie, add more ingredients based on how many people you are feeding. You will need a suitably on sale cut of beef steak and a few kielbasa sausages (or portobello mushrooms and butternut squash for the vegetarian version.) Onions, fingerling potatoes, brussel sprouts (they hold together better than cabbage) carrots, green peas, mushrooms, 3-4 cans of Guinness, salt and pepper, some red pepper flakes, cumin, basil, rosemary, and 2 bay leaves. Chop the onion and mushrooms and toss them in a pan with butter (or olive oil) along with garlic and the sliced quarter sized sausage (or butternut squash). Add a sprinkling of cumin and pepper flakes and cook until you get a bit of burn around the edges of your pieces. Toss all into biggest pot. Add a little more butter(or oil) to pan. Sautee meat (or mushrooms) at high heat with garlic to sear all edges of quarter sized chunks. Salt/pepper and add light sprinkle of cumen as it cooks. Rinse brussel sprouts, carrots and potatoes. Chop carrots to desired size. Chop base off brussel sprouts. Toss all into biggest pot with seared meat(or mushrooms.) Take Guiness and fill pot until it slightly covers all stew ingredients. Stir together with a teaspoon of red pepper flakes and tablespoon of basil. And a teaspoon of minced rosemary. Cook on medium covered for 3-4 hours Stirring occasionally. At the 4 hour mark, add 2 bay leaves and 3/4 cup of frozen peas. And 3-4 large dolups of Whiskey. I prefer Tullamore Dew or Jamison, but a nice Peaty Scotch works wonders too. Add salt, pepper, pepper flakes and basil (whiskey?) to meet your taste as it cooks down uncovered for the next 1-2 hours. Feel free to add a thickening agent or starch towards the end to thicken up the stew if desired. Stop cooking when proper taste/thickness reached. Served best with homemade rosemary soda bread.
