Preheat oven to 425°F. In a mixing bowl, combine the eggs, milk, cheeses, spinach, bacon & seasonings. Set aside. Unroll one pie crust and using a 3" round cutter, cut circles from pie crust. Save the scraps. Repeat with other crust. With the remaining scraps, gather it up into a ball and roll out with a rolling pin at the same thickness of the rounds. Cut more circles to equal 24 rounds. Place a round over a cupcake well and press down the bottoms and sides. Repeat with the rest. Spoon about a tablespoon of the egg mixture into each pie crust. Bake for 12 to 14 minutes or until filling is cooked all the way through and pastry is golden. Rotate halfway through baking.
