Hi! So here’s my first wack at a Keto Cake. I watched #themagicpill and some things resonated with me. Especially, removing some sugar and empty carbs from our diet. My daughter and I get crazy low blood sugar swings and hangry is a real thing in our life! I like the idea of a morning or afternoon cake that is filled with protein and can give you the energy you need to get through the mid-morning and afternoon lags! I read about all different sugars, and I went with Monkfruit because it seemed closest to nature. I have been vegan, vegetarian, and a full on carnivore in my life. I do believe different diets work at different times of your life. Anybody else trying this? Anyway, I thought this turned out pretty good, and it is very easy to make! It’s going fast in my house. Almond Olive Oil Cake 3 eggs 1/4 cup zest and juice from 1 orange 1/2 cup almond milk 1 Tbls. Cointreau or orange liqueur 1/2 cup quality olive oil 2 tsp. vanilla 1/2 cup monkfruit 1/4 cup sugar 1 1/2 cups almond meal 1/2 cup coconut flour 1 tsp baking powder 1 tsp baking soda Pinch of sea salt Preheat oven to 350F. Oil a 9inch spring form pan Whisk together eggs, milk, juice and zest, monkfruit, liqueur, vanilla and olive oil. Add in your dry ingredients. Gently stir and bake for 45 minutes. Let sit for 10 minutes and then enjoy! I served it with homemade whip cream but missed the picture. Teddy took this ?! Full disclaimer! I added the sugar because I was worried the cake wouldn’t have the right texture and would taste too cooling. Also the orange and liqueur aren’t Keto but I thought I am not hardcore!
