“Traditions,” one of our desserts at @189bydominiqueansel, each inspired by a kitchen lesson that chefs learn early on in their studies. My grandfather used to tear up pieces of bread and put them into soup to thicken it, so I came up with this dessert version: almond sponge cake served with a bowl of three milks - whole milk, banana milk, and evaporated milk - infused with cinnamon, star anise, and orange peel. Tear up the almond sponge, soak, and eat with a dollop of crème fraîche. #dessert #189bydominiqueansel (? by @meetjakob)
