Since it’s Galette des Rois season, we decided to make an extra large version. ?? Our La Grande Galette des Rois serves up to 70 people, and is a full 24-inches across. Like the classic version, which is traditionally eaten to celebrate Epiphany (January 6th), it’s filled with creamy almond frangipane, hand-scored on top to resemble a crown, and baked until the flaky puff pastry crust is beautifully golden. Each comes with a golden paper crown and a little fève to hide inside - whoever finds it is deemed king for the day.
