Tis' the season to treat yourself! Enjoy our Christmas Eve Prime Rib with Oyster Sauce!? Ingredients: Prime rib bone – in roast, tied 1 14 Lb Large sage sprigs 20 Large thyme sprigs 20 Bay leaves 8 Shallots, peeled and halved 8 Head garlic, cloves crushed, plus 4 cloves thinly 1 Cups water 2 Seasoning: Lee Kum Kee Panda Brand Oyster Flavored 2 Cups How to make it: Preheat oven 400 degrees F. Set meat in large roasting pan fat side up. Season meat generously w/ Lee Kum Kee Panda Brand Oyster Flavored Sauce & pepper. Around the roast scatter 10 sprigs each of sage & thyme, 6 of the bay leaves, shallots & crushed garlic cloves. Pour 1 cup of water & roast for 45 min. Reduce temp to 275 degrees F. Roast meat for 2 hours & 15 min or longer, adding remaining 1 cup water to pan as juices evaporate. Roast is done when instant-read thermometer inserted in thickest part is 135 degrees F. Transfer roast to large carving board. Pour fat in roasting pan into large heatproof bowl stopping when you reach syrupy pan juices at the bottom. Pour pan juices into small bowl & discard vegetables & herbs. Set pan over 2 burners & add 2 Tbsp. of reserved fat. Add onion, oyster sauce, peppercorns & sliced garlic, remaining bay leaves & 10 sprigs each of sage & thyme. Cook over moderate heat until onion is softened. Add wine & cook scraping up bits stuck to bottom & sides of pan. Pour mixture into medium saucepan & bring to boil over high heat. Add beef stock & pan juices & cook over moderate heat until slightly reduced. In small bowl whisk flour w/ 2 Tbsp. of reserved fat. Whisk paste into saucepan & simmer gravy until thickened. Strain gravy through fine sieve & keep warm until ready to serve. Cut bones off roast & slice meat 1/2 in thick. Cut in between bones & serve on side. Gravy: 1 cup red wine 2 tsp. Cracked mixed peppercorn 1 Tbsp.
