This is me making #vegan spanikopita from #mayimsvegantable as our thanksgiving appetizer. The filling is cashew ricotta which takes 2 minutes to make, spinach and kale. I made #tzatziki yogurt cucumber garlic dill sauce to dip them in. Recipe also in my book :)
