One of my favorite food genres is yōshoku (洋食 -western foods that have been adapted for the ?? palate). One of the best examples of “fusion” (but really what food isn’t fusion)

You probably eat this kind of food all the time in Japanese restaurants: tonkatsu, hamburg, omrice, spaghetti...I think tempura is part of this list too, and probably the first kind of yōshoku from ??. But their interpretation of ?? curry ? is still one of my favorites. I realize Japanese カレー is the equivalent of egg foo young and has nothing to do with real Indian food at this point...but I still find it delicious.
One day I wanna open up a spot dedicated to these foods.
