Cascara is dried coffee cherry (the fruit) that’s been stripped from the coffee seed (the bean). It’s typically discarded in coffee processing, but there’s so much sweet-tart flavor in this “waste” product. For our Cascara Fizz, we rescue the dried coffee cherry, steep it with sugar to make a cascara-imbued syrup, and finish it off with sparkling water and lemon.
