In autumn, I play a lot with bitterness as a flavor accent for desserts. A simple grapefruit tart with a burst of acid and just a tiny bit of bitterness to offset honey and frangipane. Or a silky bittersweet dark chocolate ganache against soft whipped lavender vanilla Chantilly cream. Both coming to @dominiqueanselkitchen this Friday.
