India boasts the world's largest dairy herd—some 300 million buffalo and cows that produce 165 million metric tons of milk annually.⠀

But between cow and consumer, milk quality has suffered. Middlemen often sneak water, sugar or powdered milk into raw milk, adding volume and lowering the quality. That's why almost all Indians boil their milk—which is where Srikumar Misra saw an opening.⠀

The former executive with one of India's largest conglomerates, and his wife, Rashima, a marketing executive who became a partner in the business, believed India's emerging middle class would spend more on a high-quality, healthy product.⠀

Armed with social media, smartphone apps and big-data analytics, their dairy business Milk Mantra is among hundreds of start-up companies leveraging the arrival of the internet in rural areas in India.⠀

The company pays farmers more for milk than informal collectors, while recording the quantity and the quality of the milk after it is tested for milk fat levels and contaminants at village collection points.⠀

"There was a huge problem with food products that people could trust," Mr. Misra said. "The opportunity was addressing this trust deficit."⠀
