Today's Cinco de Mayo deliciousness is a colorful preparation of Chiles Poblanos Rellenos de Pollo con Pipian Verde, brought to you by @Beardfoundation Award winner Hugo Ortega. This traditional dish of chicken-stuffed poblano peppers with a green pumpkin seed sauce originated in Puebla, Mexico in the 1800s. @Chef_hugo65's interpretation is a nostalgic tribute to his early days growing up in the mountainside near Oaxaca and first learning to cook with his grandmother.
