Roast chicken with couscous, loads of veggies, herbs and spices. I love this simple Moroccan-style couscous dish. Top tip, basting chicken as it cooks helps to stop it drying out, giving you lovely juicy meat. So if you can, check the chicken every 30 mins and spoon any juices in the tray back over the bird.
