I read a very interesting article by @forksoverknives and it stated that 63% of Americans calories come from processed/ refined foods, 25% come from animal based products, and 12% come from plant based with 6% of that being French fries! I was shocked! • With that, I’m posting this because I get asked a lot what I eat as an athlete. My response before August would of been very different, but since then I have changed to a gluten free vegan. So yes, I’m an athlete who gets fuel and building blocks via plants. Yes I make mistakes with it, I’m def learning and trying my hardest with this diet. No, I’m not here to preach to the world about veganism, but I thought after reading that article I would occasionally post dishes I make to show you can eat veggies and enjoy them. That carbs aren’t the enemy and there are hundreds of ways to prepare them without frying or drenching in oil. • I use social media as a place to learn things, be inspired, and support others as they follow their dreams. My goal with this post and future post is to hopefully inspire at least one person to try out some fun dishes and yes, have some friends giggle at me for broadcasting my gluten free vegan lifestyle.
