INGREDIENTS:

1 Tbsp of fat of your choice (olive oil, bacon fat, etc.)
2 eggs, whisked
1/4 pound pork Italian sausage
2 Tbsp diced onion
Broccoli florets, sliced
Cherry tomatoes, halved
Small handful of spinach leaves
1/2 avocado, sliced
FlavorGod ITALIAN ZEST Seasoning
Salt & pepper to taste
Goat cheese crumbs

INSTRUCTIONS:

In a 10-inch non-stick skillet, add I tablespoon of fat and sauté onions over medium heat about 3-4 minutes.

Next add sausage to skillet, season liberally with FlavorGod ITALIAN ZEST, and cook until browned. Remove onions and sausage from skillet and set aside.

In same skillet heat broccoli and tomatoes for about 2 minutes, then set aside.

Pour whisked eggs into the empty skillet over medium heat. Next scatter onions, sausage, broccoli, tomatoes, and a small handful of spinach leaves on top of the eggs. Don’t stir; allow to cook until eggs set. When cooked though, loosen edges of omelette with a spatula and slide onto a plate. Season with more FlavorGod ITALIAN ZEST if desired, and salt and pepper to taste. Garnish with avocado slices and goat cheese.
