Overnight white with 80% Biga from FWSY. I used a fifty fifty mixture of hard white and hard red from Grist & Toll for the Biga, and regular old Gold Medal bread flour for the rest. It's a little more sense than I wanted, but it's soft and the crust is chewey and it's pretty delicious.
