Line a large baking sheet with foil and set a cooling rack on top. Spray the cooling rack with cooking spray and set aside Cut the zucchini into ¼" thick rounds. Measure the flour and place into a medium ziploc bag. Set aside Prepare two bowls. One with the egg, beaten and the other with the panko, parmesan cheese & seasonings. Place all the zucchini in the bag, close it up and shake to evenly coat. Grab a few at a time, gently shaking off excess flour. Dip the zucchini in the egg, then place it in the panko mixture, covering completely. Transfer the coated zucchini pieces to the prepared rack, in a single layer. Repeat with remaining zucchini pieces. Lightly coat the zucchini with cooking spray. Bake for 7 minutes and then take it out of the oven Turn the pieces over and bake for another 7 minutes or until golden brown. Serve immediately. - FLAVORGOD.COM

Ingredients:
