Does food grown in a basement appeal to you? If you’ve eaten at some of New York’s top restaurants recently, you’ve probably tried it. In TriBeCa, a #hydroponic facility called @farm.one is growing rare herbs and edible flowers underground — and many prominent chefs are flocking to it. There’s no fresh air or natural light, but the 2-room venue can grow around 580 varieties of rare herbs and flowers. @leturtlenyc, @lecoucou_nyc, The Pool and @missionchinesefood get regular deliveries from @farm.one, sometimes several times a week. “All we need is a floor drain, water, power, temperature control, and the ability to seal the space so bugs don’t get in,” said Robert Laing, the farm’s chief executive and founder. The farm does deliberately bring in a few types of insects that are beneficial for plants, like ladybugs. “You can buy them on Amazon,” Robert said. @sarahblesener photographed the harvest room at #FarmOne.
