When fully thawed, let it sit at room temp for an hour) - 4 c all purpose flour 2.5 Tbsp cornmeal 1/2 tsp salt 1 packet rapid instant yeast 1/4 c olive oil 1 c + 3 Tbsp warm water 1/4 c butter, room temperature(should be spreadable) - Sauce, recipe below Mozzarella cheese, freshly shredded Toppings of choice Fresh grated parmesan - Mix the first 6 ingredients, and knead with a stand mixer fit with a dough hook for 7 minutes on medium low speed. The dough should be nice and smooth and when prodded, it should bounce back. Lightly spray a large bowl with cooking spray. Place the dough in the oiled bowl, cover, and let rise for about an hour or until it doubles. Punch dough. On a lightly floured surface, flatten out dough into a 14"x5" rectangle. Spread the butter across the top and roll. Proof the dough in the oiled bowl again for 1 hour. Punch dough once more. Generously grease your skillet with oil. Stretch the dough with your hands or rolling pin to make a 13" circle. Lay the dough in the pan, and press it up the edges. Cover, and let it rest for 15 minutes. Preheat the oven to 425°F. If the dough falls back down after resting, stretch it again and press against the edges. Bake the crust for 10 minutes. Remove from the oven, add sauce, cheese & toppings. Finish off with some parmesan cheese. (This is optional, but you can brush a bit of butter around the crust and sprinkle garlic lovers seasoning on it.) Bake for another 25 minutes. - (Tip!
