It's starting to come together. @189bydominiqueansel opens its doors in just a few weeks, where we'll be cooking up our takes on good comforting food. For dinner, here's our Roasted Baby Chicken with Black Garlic Rice Stuffing and Chilled Spicy Scallion Salad (there's a shot of chicken jus on the side too). Growing up, roast chicken was such a treat for both our executive chef Hyun (@hgplee) and me. Back in France, it was a juicy chicken from the store wrapped in paper with all the drippings, which my parents would save up money for each month. And for Hyun, it was the Korean Samgyetang his mom would cook, tender chicken stuffed with rice in an aromatic soup. So here we are. And we can't wait to cook this for you all.
